A delightful Italian dish featuring juicy chicken, creamy sauce, and fresh spinach perfect for any occasion.

  • 2 chicken breasts
  • 8 oz pasta (fettuccine or penne)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Basil for garnish

Instructions

  1. Cook the pasta according to package directions; drain and set aside.
  2. Season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium heat and add the chicken. Cook until golden and cooked through, about 6-7 minutes per side. Remove from skillet and let rest before slicing.
  3. Add garlic and sauté for about 1 minute.
  4. Add sun-dried tomatoes and spinach and cook until the spinach is wilted.
  5. Stir in chicken broth and heavy cream, bringing it to a simmer.
  6. Mix in the cooked pasta and chicken, and add Parmesan cheese, stirring until combined.
  7. Serve warm, garnished with basil.
