Creamy Smothered Chicken and Rice

A comforting and creamy chicken dish served over rice, perfect for busy weeknights.

Ingredients

  • 2 chicken breasts
  • 1 cup rice
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat until it shimmers.
  2. Add the chopped onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
  3. Brown the chicken breasts in the pan for about 5 minutes on each side.
  4. Pour in the chicken broth, scraping up any flavorful bits stuck to the bottom of the pan. Bring to a gentle simmer.
  5. Add the rice to the pan. Cover and reduce the heat to low, cooking until the rice absorbs the broth, about 15-20 minutes.
  6. Stir in the heavy cream along with salt and pepper to taste, cooking until the sauce thickens.
  7. Garnish with fresh parsley and serve warm.

Notes

For a lighter dish, substitute half-and-half for the heavy cream. Leftovers are good in the fridge for up to 3 days.
