A comforting and creamy Italian sausage soup that warms your soul, perfect for autumn evenings.

Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cups spinach
  • Salt and pepper to taste
  • 1 tablespoon Italian seasoning

Instructions

  1. Brown the sausage in a large pot over medium heat until browned.
  2. Add the diced onion and minced garlic, cooking until the onion is translucent.
  3. Pour in the chicken broth and diced tomatoes, and bring to a boil.
  4. Reduce the heat and stir in the heavy cream and Parmesan cheese until melted.
  5. Add the spinach, and season with salt, pepper, and Italian seasoning.
  6. Allow to simmer for 5-10 minutes, then serve hot.
