  • 2 – 3 garlic cloves (minced)
  • 3 cups fresh spinach
  • 1 cup heavy cream or dairy-free alternative
  • ½ cup grated Parmesan cheese (optional)
  • ¾ – 1 cup crumbled feta cheese
  • Salt and freshly ground black pepper (to taste)
  • Optional: red pepper flakes for heat

Instructions

  1. Bring a large pot of salted water to a boil, add gnocchi, and cook until they float; drain and set aside.
  2. Heat butter or oil in a large skillet over medium heat; sauté chopped onion until soft, about 3–4 minutes.
  3. Add minced garlic to the skillet and cook for 1 minute more, savoring the fragrant aroma.
  4. Add fresh spinach and cook, stirring frequently, until wilted, creating a vibrant green base for your sauce.
  5. Pour in heavy cream and simmer until slightly thickened, about 2–3 minutes; stir in Parmesan cheese if using, enhancing the depth of flavor.
  6. Add the cooked gnocchi to the creamy sauce and toss gently to coat, ensuring every piece is enveloped in the delectable sauce.
