Decadent Garlic Parmesan Creamy Potatoes that are tender, fluffy, and coated in a rich, creamy sauce.

Ingredients

  • 2 lb baby or small red potatoes (halved or quartered)
  • 2–3 tablespoons olive oil
  • 3–4 cloves garlic (minced)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup heavy cream or half-and-half
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley (optional garnish)

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the halved or quartered red potatoes with olive oil, minced garlic, salt, and black pepper.
  3. Place the seasoned potatoes in a single layer on a baking sheet.
  4. Roast the potatoes in the preheated oven for 25 to 30 minutes, turning halfway through.
  5. Melt butter in a small saucepan over medium heat.
  6. Add the heavy cream and let it simmer gently.
  7. Stir in the grated Parmesan cheese until it melts.
  8. Toss the roasted potatoes with the creamy Parmesan sauce until they’re evenly coated.
  9. Garnish with chopped fresh parsley if desired and serve warm.

Notes

Use small red potatoes for the best texture. You can also adjust cream and cheese amounts for personal preference.
