A luxurious bisque featuring tender crab and shrimp in a creamy, velvety broth, perfect for any occasion.

Ingredients

  • 1 cup fresh crab meat, picked over for shells
  • 1 cup shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups seafood stock
  • 1 cup heavy cream
  • 1/2 cup dry white wine
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Lemon wedges for garnish

Instructions

  1. Sauté the aromatics in a large pot with olive oil over medium heat for 5-7 minutes until softened.
  2. Deglaze with the white wine, simmer for 2-3 minutes to evaporate the alcohol.
  3. Season the base by adding seafood stock, Old Bay, cayenne, salt, and pepper. Bring to a gentle boil.
  4. Let it simmer for 15 minutes to meld the flavors.
  5. Blend in the heavy cream and return to a low simmer.
  6. Introduce the crab and shrimp, cooking for an additional 5-7 minutes until the shrimp are pink and cooked through.
  7. Adjust seasoning as necessary and let the bisque sit for a few minutes before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half. This bisque can also be made with frozen seafood.
