A hearty, rich soup featuring ground beef, tender potatoes, and sweet corn in a creamy broth, perfect for cozy gatherings.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 1 can (15 oz) sweet corn, drained
  • 1 can (15 oz) diced tomatoes, undrained
  • 3 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup chopped fresh cilantro (for garnish)

Instructions

  1. Brown the ground beef in a large pot over medium heat, until browned; drain excess fat.
  2. Sauté the diced onion and minced garlic with the browned beef until the onion is translucent, about 5 minutes.
  3. Combine the diced potatoes, sweet corn, diced tomatoes (with juices), and beef broth; bring to a boil.
  4. Simmer on low heat, covered, for about 15-20 minutes, until potatoes are tender.
  5. Stir in the heavy cream, shredded cheddar cheese, chili powder, cumin, salt, and black pepper; combine well.
  6. Heat through until the cheese has melted and the soup is warmed; adjust seasoning if needed.
  7. Garnish each bowl with chopped fresh cilantro before serving.

Notes

Pairs well with cornbread or crusty bread. Can add diced avocado or sour cream for extra flavor.
