Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • 1 ½ cups uncooked pasta (penne or rotini)
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish

Instructions

  1. Sauté the aromatics by heating olive oil in a large pot. Add diced onion and cook until softened.
  2. Add the veggies: toss in minced garlic, diced carrots, and diced celery, cooking until fragrant.
  3. Cook the chicken until no longer pink, allowing it to absorb flavors.
  4. Combine the base with chicken broth, diced tomatoes, and seasonings. Bring to a boil.
  5. Bring on the pasta by stirring in uncooked pasta and simmer until al dente.
  6. Stir in cream and Parmesan cheese, mixing until melted and creamy.
  7. Let the soup rest to thicken slightly before serving.
  8. Garnish with fresh herbs and serve hot.

Notes

For leftovers, cook pasta separately to prevent it from becoming mushy. Adjust seasoning before serving for enhanced flavor.
