A comforting casserole with chicken, broccoli, and creamy goodness, perfect for chilly nights.

Ingredients

  • 1/2 cup Unsalted butter
  • 4 cloves Garlic, minced
  • 1/4 cup Chicken stock
  • 10.5 oz Cream of chicken with herbs
  • 10.5 oz Heavy cream
  • 1/3 cup Boursin cheese
  • 1/2 cup Sour cream
  • 56 pieces Chicken thighs
  • 1 tbsp Olive oil
  • 3 tbsp Bayou City all-purpose seasoning
  • 1 tbsp Bayou City garlic pepper
  • 4 cups Cooked white rice
  • 4 cups Broccoli florets, cooked
  • 1.5 cups Cheddar cheese, shredded
  • 1/2 tsp Cayenne pepper
  • 1 tsp Onion powder
  • Salt & pepper to taste

Instructions

  1. Sauté the aromatics by melting the butter and stirring in the garlic.
  2. Cook the chicken thighs, seasoning them well and sautéing until golden brown.
  3. Deglaze the pan with chicken stock, scraping up the brown bits.
  4. Create the creamy sauce by adding cream of chicken, heavy cream, Boursin cheese, sour cream, spices, and mixing until combined.
  5. Mix in the cooked rice and broccoli until coated in the sauce.
  6. Add shredded cheddar cheese and transfer to a baking dish.
  7. Bake at 350°F for 25-30 minutes until bubbly and golden.
  8. Rest for 5 minutes before serving.

Notes

Serve with a crisp salad or garlic bread. Leftovers can be refrigerated for up to 3 days or frozen for 3 months.
