A comforting and creamy chicken and rice dish that simmers on the stovetop, perfect for cozy dinners with loved ones.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup long-grain rice, rinsed
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup frozen peas
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 1 teaspoon dried thyme (optional)
  • 1/2 cup grated parmesan cheese (optional, for extra creaminess)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Sauté the aromatics in olive oil until onion is translucent and fragrant.
  2. Brown the chicken pieces, seasoning with salt and pepper, until cooked on all sides.
  3. Add the rinsed rice, ensuring it’s coated with the chicken and aromatics.
  4. Pour in the chicken broth, bring to a boil, then simmer until rice is tender.
  5. Introduce the heavy cream and peas, and add parmesan cheese if desired, cooking until heated through.
  6. Garnish with fresh parsley before serving.

Notes
