A delightful twist on classic banana bread, featuring a luscious cream cheese filling.

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 4 ounces cream cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat the oven and prepare your loaf pan by greasing a 9×5 inch loaf pan.
  2. Mash the ripe bananas in a mixing bowl until smooth and stir in the melted butter.
  3. Combine the baking soda and a pinch of salt, then add the sugar, egg, and vanilla, stirring until well combined.
  4. Incorporate the all-purpose flour and gently mix until just combined.
  5. Prepare the cream cheese mixture by mixing cream cheese, powdered sugar, and lemon juice until smooth.
  6. Layer half of the banana batter into the loaf pan, spread the cream cheese mixture on top, then pour the remaining banana batter over it.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For maximum sweetness, ensure your bananas are very ripe. You can substitute cream cheese with Greek yogurt for a lighter filling.
