A savory stuffed chicken dish with creamy Brie cheese and tangy cranberries, perfect for both weeknight dinners and special occasions.

  • 4 boneless, skinless chicken breasts
  • 120 grams (4.2 oz) of Brie cheese, rind removed and cut into thin slices
  • 1/2 cup dried cranberries
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup chicken broth
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) to kickstart our flavorful journey.
  2. Begin by preparing the chicken. Using a sharp knife, slice a pocket into each chicken breast, being careful not to cut all the way through.
  3. Mix together the Brie slices, dried cranberries, and thyme in a small bowl.
  4. Stuff each chicken breast with an equal amount of the Brie and cranberry mixture. Secure with toothpicks.
  5. Season the outside of the chicken breasts with garlic powder, salt, and black pepper.
  6. In a large oven-safe skillet, heat the olive oil over medium-high heat and sear each side of the stuffed chicken breasts for about 3-4 minutes until golden brown.
  7. Pour the chicken broth into the skillet around the chicken breasts.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through.
  9. Once done, remove the skillet from the oven and let the chicken rest for a few minutes.
  10. Serve the stuffed chicken breasts hot, garnished with fresh parsley.

Notes

Make the stuffing in advance to save time. Substitute Brie with goat cheese or mozzarella for variation.
