A hearty and comforting breakfast skillet filled with crispy potatoes, vibrant vegetables, and perfectly cooked eggs.

  • 2 tablespoons olive oil
  • 1 pound potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 4 eggs
  • Salt and pepper to taste
  • 1 cup cooked sausage, crumbled
  • 1 cup shredded cheese
  • Fresh herbs for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced potatoes to the hot oil, cooking until golden and tender, about 10-15 minutes.
  3. Stir in the chopped onion and bell pepper, cooking until tender and aromatic.
  4. Add the crumbled cooked sausage to the skillet and mix well to combine.
  5. Create small wells in the potato mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking.
  7. Season with salt and pepper and sprinkle with shredded cheese to melt over the top.
  8. Garnish with fresh herbs and serve hot.

Notes

For crispier potatoes, don’t overcrowd the skillet. Experiment with different egg styles and consider a meat-free option for variety.
