A vibrant, flavorful dish featuring pasta, cottage cheese, cherry tomatoes, and spinach that comes together in just 25 minutes.

Ingredients

  • 8 oz pasta (any type)
  • 1 cup cottage cheese
  • 1 cup cherry tomatoes, halved
  • 1/2 cup spinach, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic. Sauté until fragrant.
  3. Toss in the cherry tomatoes and chopped spinach into the skillet. Cook until the spinach wilts and the tomatoes soften, releasing their sweet juices.
  4. Stir in the cottage cheese and add the drained pasta, mixing until everything is well combined and creamy.
  5. Sprinkle in salt, pepper, and grated Parmesan cheese, tossing everything together so it’s thoroughly coated.
  6. Serve warm, garnished with fresh basil if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water or olive oil to retain creaminess.
