  • 1 cup cottage cheese
  • 1 cup all-purpose flour
  • 4 eggs
  • 1/2 cup milk
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter (for frying)

Instructions

  1. Gather your ingredients. In a mixing bowl, combine the cottage cheese, eggs, milk, sugar, baking powder, and salt. Mix well until everything is blended together.
  2. Incorporate the flour. Gradually add the flour to the wet ingredients, stirring until just combined. It’s okay if there are a few lumps—this will keep your pancakes fluffy!
  3. Heat a skillet over medium heat and add a little butter or oil. You want it hot enough to sizzle but not so hot that it burns.
  4. Pour batter onto the skillet, using about 1/4 cup for each pancake. Leave some space between the pancakes as they will spread a bit.
  5. Watch for the bubbles. Cook until bubbles form on the surface of the pancakes. This is your cue to flip them!
  6. Flip the pancakes and cook until they’re golden brown on the other side. Remove from the skillet and keep warm while you repeat with the remaining batter.
