Light, fluffy pancakes made with cottage cheese for a protein-packed breakfast that’s easy to make.

Ingredients

  • 1 cup cottage cheese
  • 1 cup milk
  • 4 eggs
  • 1 cup flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Butter or oil for greasing the pan

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish with butter or oil.
  2. Combine the cottage cheese, milk, and eggs in a bowl until well mixed.
  3. Mix the flour, sugar, baking powder, and salt in another bowl.
  4. Combine the dry ingredients with the wet ingredients, stirring until just mixed.
  5. Prepare the batter in the greased baking dish and smooth the surface.
  6. Bake for 25-30 minutes or until golden and toothpick comes out clean.
  7. Let cool slightly before cutting into squares and serve warm.

Notes

These pancakes can be topped with maple syrup or fresh berries. Store leftovers in the refrigerator for up to 3 days.
