A warm, cheesy, and hearty crustless quiche made with cottage cheese, perfect for any meal.

Ingredients

  • 6 large eggs
  • 1 cup whole milk cottage cheese
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 cup grated cheese (optional)
  • Up to 1 cup choice of vegetables and proteins (bell peppers, spinach, mushrooms, bacon, or ham)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9-inch baking dish with oil.
  3. Blend the eggs, cottage cheese, salt, and pepper until smooth.
  4. Stir in the grated cheese and your chosen vegetables/proteins.
  5. Mix thoroughly and pour the mixture into the prepared baking dish. Bake for about 45 minutes, or until the center is set and the edges are golden brown.
  6. Allow to cool slightly before slicing and serving.

Notes

This quiche can be customized based on available ingredients, and leftovers can be stored in the refrigerator for up to 3 days or frozen for up to 2 months.
