A delightful and comforting baked dish combining creamy cottage cheese and sweet blueberries, perfect for breakfast or dessert.

  • 2 cups cottage cheese
  • 1 cup blueberries
  • 2 eggs
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish to ensure easy removal of the bake.
  2. Combine the cottage cheese, eggs, honey or maple syrup, vanilla extract, and cinnamon in a large mixing bowl. Stir until well blended.
  3. Add the rolled oats, baking powder, and a pinch of salt. Stir until combined.
  4. Fold in the blueberries gently to retain airiness.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Bake for 30-35 minutes, until the top is golden and set.
  7. Allow to cool slightly before slicing. Serve warm or chilled.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. This bake can also be prepared the night before and reheated in the morning.
