A delightful and moist banana bread enriched with cottage cheese, perfect for breakfast or a healthy snack.

Ingredients

  • 1 cup cottage cheese
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/3 cup honey or sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash your ripe bananas with a fork until mostly smooth.
  3. Add cottage cheese, eggs, honey (or sugar), and vanilla extract to the mashed bananas, and mix until well combined.
  4. Whisk together flour, baking powder, baking soda, salt, and cinnamon in a separate bowl.
  5. Fold the dry ingredients into the wet mixture, being careful not to overmix.
  6. Grease a loaf pan or line it with parchment paper and pour the batter in.
  7. Bake for about 50 to 60 minutes until a toothpick inserted comes out clean.
  8. Cool the bread in the pan for 10 minutes before transferring to a wire rack.
  9. Slice the bread once cooled and enjoy!

Notes

For extra flavor, consider adding nuts, chocolate chips, or dried fruit. It can be stored in an airtight container for up to 3 days.
