  • 2 teaspoons baking soda
  • 1 1/4 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 3/4 cup unsalted butter (softened)
  • 1 cup dark brown sugar
  • 1/4 cup molasses
  • 1 large egg
  • 3/4 cup granulated sugar (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C) and line your baking sheets with parchment paper.
  2. Cream together the softened butter and dark brown sugar until light and airy.
  3. Add in the molasses and egg, mixing until fully combined.
  4. Sift together the flour, baking soda, spices, and salt into the wet mixture.
  5. Combine the ingredients until a thick dough forms.
  6. Roll the dough into small balls and coat each in granulated sugar.
  7. Flatten each dough ball slightly with damp fingers.
  8. Bake for 10 to 15 minutes until edges are set but centers remain soft.
  9. Cool on the sheets for a few minutes before transferring to wire racks.
