A moist and flavorful coffee cake, perfect for brunch or cozy afternoons, topped with a delightful cinnamon streusel.

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon melted butter
  • 1 egg (room temperature)
  • 1½ cups buttermilk (room temperature)
  • 3 tablespoons softened butter
  • 1 tablespoon cinnamon
  • ½ cup all-purpose flour (for streusel)
  • ½ cup brown sugar
  • ½ cup firmly packed light brown sugar
  • ¼ cup butter (cubed)
  • â…› teaspoon salt (for streusel)
  • ½ cup powdered sugar (for glaze)
  • 2½ teaspoons milk (for glaze)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×9-inch baking dish.
  2. Combine dry ingredients in a large bowl, whisking together flour, baking powder, baking soda, and salt.
  3. Mix the melted butter, egg, and buttermilk in another bowl until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spread half of the batter into the prepared dish.
  6. Mix the remaining flour, both sugars, cinnamon, cubed butter, and salt in a medium bowl to create a crumbly streusel topping.
  7. Sprinkle half of the streusel topping over the batter.
  8. Dollop the remaining batter on top of the streusel.
  9. Sprinkle the rest of the streusel topping over the batter.
  10. Bake for about 30-35 minutes or until a toothpick comes out clean.

Notes

Pairs wonderfully with coffee or tea. Store leftovers in an airtight container for up to 3 days at room temperature.
