Soft and fluffy coffee cake muffins with a crumbly cinnamon topping, perfect for breakfast or a snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Combine the flour, baking powder, cinnamon, and salt in another bowl, then gradually add to the butter mixture alternating with the milk.
  5. Mix the brown sugar with the nuts and a bit of cinnamon for the topping.
  6. Fill each muffin cup halfway with batter, sprinkle with the brown sugar mixture, then add more batter until cups are about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Allow the muffins to cool before serving warm.

Notes

These muffins can be stored in an airtight container for up to 3 days or frozen for up to a month.
