A comforting and nostalgic dish that brings the flavors of the tropics to your kitchen. This Coconut Rice and Beans recipe combines creamy coconut milk with tender black beans for a delicious one-pot meal.

Ingredients

  • 2 cups rice
  • 1 can (400ml) coconut milk
  • 1 can (400g) black beans, drained and rinsed
  • 2 cups water
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil in a large pot over medium heat.
  3. Add chopped onion and minced garlic, sautéing until soft.
  4. Combine rinsed rice, coconut milk, water, salt, cumin, and paprika in the pot.
  5. Bring the mixture to a boil, then reduce heat to low and cover.
  6. Stir in black beans and cook for an additional 5 minutes.
  7. Remove from heat and let sit covered for 5 minutes before serving.

Notes

For added flavor, serve with avocado, tomato salad, or lime wedges. Leftovers can be refrigerated for up to 4 days.
