A delightful twist on a classic rice dish, combining the tropical flavors of coconut and pineapple for a fluffy, aromatic side.

  • 1 cup jasmine rice
  • 1 can (13.5 oz) coconut milk
  • 1 cup pineapple chunks (fresh or canned)
  • 1 cup water
  • Salt to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. Combine the rinsed rice, coconut milk, water, and a pinch of salt in a medium saucepan.
  3. Bring the mixture to a boil over medium heat.
  4. Reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes.
  5. Fluff the rice with a fork and gently stir in the pineapple chunks.
  6. Serve warm, garnished with fresh cilantro if desired.

Notes

For a unique flavor, add a squeeze of lime juice or coconut flakes before serving. Store in an airtight container in the fridge for up to 3 days.
