A nostalgic dessert featuring fluffy biscuits topped with sweet strawberries and whipped cream.

  • 2 cups strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Prepare the strawberries by mixing them with 1/4 cup sugar and letting them sit for 30 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. Combine the flour, baking powder, salt, and remaining sugar in a large bowl. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  4. Stir in the heavy cream and vanilla extract until just combined.
  5. Roll out the dough on a floured surface to about 1-inch thick and cut out rounds.
  6. Bake the shortcakes for 15-20 minutes until golden brown.
  7. Assemble the shortcakes by slicing them in half and layering with strawberries and whipped cream.

Notes

For a citrusy twist, add lemon zest to the cream or fold in chopped berries into the dough.
