A comforting classic beef stew simmered to perfection, filled with tender beef, hearty vegetables, and rich flavors that warm the soul.

Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 4 cups beef broth
  • 4 carrots, sliced
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.
  2. Add the beef chunks and brown on all sides.
  3. Remove the browned beef and set aside.
  4. Add the chopped onion and minced garlic to the pot and sauté until softened, about 4-5 minutes.
  5. Stir in the tomato paste, Worcestershire sauce, and dried thyme.
  6. Return the beef to the pot and add beef broth, sliced carrots, and diced potatoes.
  7. Bring the mixture to a boil, then reduce heat and let it simmer for 1.5 to 2 hours.
  8. Season with salt and pepper to taste before serving.

Notes

Serve with bread rolls or mashed potatoes. Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage.
