Ingredients

Scale
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 tsp ground cinnamon
  • Whipped cream for topping
  • Churro bites for garnish

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined.
  3. Press it firmly into the bottom of a 9-inch springform pan.
  4. In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract together until smooth and creamy.
  5. Add the eggs, one at a time, mixing well after each addition.
  6. Gently pour the smooth cream cheese mixture over the prepared crust.
  7. Bake the cheesecake in the preheated oven for 55-60 minutes.
  8. Once baked, let the cheesecake cool to room temperature before transferring it to the refrigerator.
  9. Chill for at least 4 hours, allowing the flavors to meld beautifully.
  10. Before serving, sprinkle the top with a mix of cinnamon and sugar and add whipped cream and churro bites.

Notes

Allow the cheesecake to cool completely before refrigerating. Use room temperature cream cheese for a smoother batter.
