A rich cheesecake with the warm flavors of churros, featuring a graham cracker crust and a cinnamon sugar topping.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 teaspoon cinnamon
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/4 cup sugar for topping
  • 1 teaspoon cinnamon for topping

Instructions

  1. Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. Mix the graham cracker crumbs, melted butter, 1/4 cup sugar, and 1 teaspoon cinnamon until well combined. Press into the bottom of the prepared pan.
  3. Beat the cream cheese until smooth. Add 1 cup of sugar and the vanilla extract; mix well.
  4. Add eggs one at a time, mixing on low speed until just combined.
  5. Stir in the sour cream until smooth, then pour over the crust.
  6. Bake for 50-60 minutes, until the center is set with a gentle jiggle.
  7. Mix 1/4 cup sugar and 1 teaspoon cinnamon for the topping.
  8. Sprinkle the cinnamon sugar over the cheesecake after baking. Let cool at room temperature.
  9. Refrigerate for at least 4 hours before serving.

Notes

Serve chilled with whipped cream or caramel sauce. Leftovers can be stored in the refrigerator for up to 5 days.
