Light and airy chocolate meringue cookies with a crunchy exterior and soft, chewy center.

Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1/4 teaspoon cream of tartar
  • 1 teaspoon vanilla extract
  • 1/2 cup cocoa powder
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
  2. Beat the egg whites in a clean, dry bowl until soft peaks form.
  3. Gradually add the granulated sugar, continuing to beat until stiff peaks form.
  4. Add the cream of tartar and vanilla extract, mixing well.
  5. Sift in the cocoa powder and gently fold it in.
  6. Incorporate the chocolate chips if desired.
  7. Drop spoonfuls of the meringue mixture onto the prepared baking sheet.
  8. Bake for 1.5 to 2 hours or until the cookies are crisp.
  9. Cool the cookies inside the oven until completely dry.
