Indulge in this decadent chocolate lava cake that oozes a silky river of chocolate with every bite.

Ingredients

  • ½ cup unsalted butter (115 g)
  • 4 oz dark chocolate (chopped, 115 g)
  • 1 cup powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • Pinch of salt
  • Vanilla ice cream (optional for serving)
  • Powdered sugar (optional for dusting)
  • Fresh berries (optional for serving)

Instructions

  1. Preheat the oven to 425 °F (220 °C). Butter and flour four ramekins and place them on a baking sheet.
  2. Melt the butter and chocolate together in a heatproof bowl using the microwave or double boiler until smooth.
  3. Whisk in the powdered sugar until well combined.
  4. Add the eggs and egg yolks one at a time, whisking thoroughly after each addition.
  5. Stir in the vanilla, then fold in the flour and salt until just combined.
  6. Divide the batter evenly among the ramekins.
  7. Bake for 11 to 13 minutes until the edges are set but the centers remain soft.
  8. Let the cakes rest for 1 minute before serving. Invert onto plates or serve in ramekins, dust with powdered sugar and top with ice cream and berries if desired.

Notes

Best enjoyed fresh. Can refrigerate leftovers for up to 2 days. Reheat to maintain gooey center.
