Delicious chocolate lava brownie cookies with a chewy exterior and gooey center, perfect for any celebration.

  • 1 3/4 cups sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 6 – 8 oz chocolate chunks or chocolate ganache

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Melt the butter gently in a microwave-safe bowl or on the stovetop and let cool.
  3. Combine the melted butter and sugar in a large bowl until smooth.
  4. Add the eggs one at a time, mixing thoroughly after each.
  5. Stir in the vanilla extract until well incorporated.
  6. Sift in the flour, cocoa powder, baking powder, and salt, and gently fold until just combined.
  7. Scoop about 1.5 to 2 tablespoons of dough, flatten it slightly, and place a piece of chocolate or ganache in the center.
  8. Wrap the dough around the chocolate and roll it into a ball.
  9. Bake for 9-12 minutes until edges are set but centers are soft.
  10. Cool the cookies on the baking sheet for a few moments before transferring them to a wire rack.

Notes

Use high-quality chocolate for the center for the best flavor. Allow melted butter to cool to avoid cooking the eggs.
