A comforting one-pan dish combining juicy chicken, tender zucchini, and earthy mushrooms enveloped in a creamy sauce, topped with melted mozzarella cheese.

  • 2 large chicken breasts (sliced)
  • 2 zucchini (sliced)
  • 2 cups mushrooms (sliced)
  • 1 small onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Salt and black pepper (to taste)
  • ½ teaspoon paprika
  • ½ teaspoon Italian seasoning
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease the baking dish.
  2. Heat the olive oil in a large pan over medium heat.
  3. Add the sliced chicken to the pan and cook for 3 to 4 minutes until it’s lightly golden. Season with salt, pepper, paprika, and Italian seasoning.
  4. Stir in the chopped onion, sliced mushrooms, zucchini, and minced garlic, cooking for another 4 minutes.
  5. Reduce the heat and stir in the heavy cream and chicken broth. Let simmer for about 2 minutes.
  6. Add the grated Parmesan cheese, stirring until it melts into the sauce.
  7. Transfer the mixture to your prepared baking dish.
  8. Top the mixture evenly with shredded mozzarella cheese.
  9. Bake for 20 to 25 minutes, or until bubbly and golden.
  10. Let it rest for 5 minutes before serving.
  11. Serve alongside rice, pasta, or garlic bread.

Notes

For added flavor, feel free to experiment with vegetables or seasonings. This dish also keeps well; store leftovers in an airtight container for up to 3 days or freeze for a month.
