  • 1 lb Chicken Breast
  • 2 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • Salt & Black Pepper to taste
  • 2 cups Cooked Rice (white, brown, or jasmine)
  • 1 Cucumber, diced
  • 1 cup Cherry Tomatoes, halved
  • 1 Red Onion, diced
  • 1/4 cup Parsley, chopped
  • 1 cup Greek Yogurt
  • 2 tbsp Lemon Juice
  • 1 tbsp Dill

Instructions

  1. Marinate the Chicken: Season the chicken breast with olive oil, garlic powder, paprika, salt, and black pepper. Let it marinate for at least 30 minutes.
  2. Grill the Chicken: Preheat your grill or skillet. Cook the marinated chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F.
  3. Prepare the Tzatziki: In a bowl, mix the Greek yogurt, diced cucumber, lemon juice, dill, salt, and pepper. Stir until creamy and set aside.
  4. Chop the Vegetables: Dice the cucumber, halve the cherry tomatoes, and chop the red onion and parsley.
  5. Assemble the Bowl: Start with a base of cooked rice, top with fresh veggies and sliced grilled chicken, then add a generous dollop of tzatziki.
