A comforting and flavorful Chicken Tortilla Soup with tender chicken, rich broth, and crunchy tortilla strips.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup corn
  • 2 cups cooked chicken, shredded
  • 1 lime, juiced
  • Salt and pepper to taste
  • Tortilla strips, for serving
  • Chopped cilantro, for garnish
  • Avocado, for topping

Instructions

  1. Heat olive oil over medium heat in a large pot.
  2. Add onion and garlic, sauté until softened.
  3. Stir in bell pepper, chili powder, and cumin; cook for another 2-3 minutes.
  4. Pour in chicken broth, diced tomatoes, corn, and shredded chicken.
  5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
  6. Season with lime juice, salt, and pepper.
  7. Serve hot, topped with tortilla strips, cilantro, and avocado.

Notes

For extra flavor, add jalapeños or diced green chilies. You can also use rotisserie chicken for convenience.
