A quick and nutritious chicken stir fry with garlic, ginger, and mixed vegetables, perfect for weeknight dinners.

Ingredients

  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 tablespoon ginger, minced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken and cook for about 5-7 minutes until browned and cooked through.
  3. Stir in the minced garlic and ginger, cooking for an additional minute.
  4. Add the mixed vegetables, stir-frying for about 3-5 minutes until tender-crisp.
  5. Pour in the soy sauce and toss to combine.
  6. Season with salt and pepper to taste.
  7. Serve over cooked rice or noodles, garnished with fresh herbs if desired.
