Warm and crispy quesadillas filled with seasoned chicken and melted cheese, perfect for family gatherings or quick weeknight meals.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 4 large flour tortillas
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 teaspoon taco seasoning
  • Cooking oil for frying
  • Sour cream and salsa for serving

Instructions

  1. Mix the shredded chicken with taco seasoning, bell peppers, and onions in a bowl.
  2. Heat a large skillet over medium heat and add a little oil.
  3. Place one tortilla in the skillet, sprinkle half with cheese, and add the chicken mixture on top.
  4. Cook until the bottom is golden brown, then flip and cook the other side.
  5. Remove from the skillet, slice into wedges, and serve with sour cream and salsa.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, and reheating in a skillet will retain their crunch.
