Chicken Quesadillas

Delicious chicken quesadillas filled with tender chicken, melted cheese, and sautéed veggies.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup bell peppers, sliced
  • 1/2 cup onions, sliced
  • 4 flour tortillas
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sliced onions and bell peppers to the skillet and sauté until they soften.
  3. Mix the shredded chicken with a sprinkle of salt and pepper.
  4. Place a tortilla in the skillet, sprinkle some cheese, layer on the chicken mixture, and top with more cheese and another tortilla.
  5. Cook until the bottom tortilla is golden brown, then flip and cook the other side until browned and cheese is melted.
  6. Remove from skillet, slice into wedges, and serve.

Notes

Serve with guacamole, fresh salsa, or sour cream. Can be made vegetarian by swapping chicken for black beans or mushrooms.
