  • 1 cup milk
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 1/4 cup all-purpose flour
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 2 cups all-purpose flour (for biscuits)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt (for biscuits)
  • 1/2 cup unsalted butter, chilled and cubed
  • 1 cup shredded sharp cheddar cheese
  • 2 tablespoons fresh sage, chopped
  • 3/4 cup buttermilk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Sauté the chicken in a large skillet with olive oil over medium heat until browned and cooked through, about 5-7 minutes. Remove and set aside.
  3. Cook the onion, carrots, and celery in the same skillet until softened, about 4-5 minutes, then add garlic and cook for an additional minute.
  4. Incorporate the flour by sprinkling it over the vegetables and stirring for 1-2 minutes.
  5. Create the sauce by gradually adding the chicken broth, stirring until thickened, then adding milk and heavy cream until smooth.
  6. Combine the chicken and peas with thyme, rosemary, Worcestershire sauce, salt, and pepper. Mix well and remove from heat.
  7. Pour the chicken mixture into a large baking dish evenly.
  8. Prepare the biscuit dough by whisking flour, baking powder, baking soda, and salt in a bowl. Cut in the butter until it resembles coarse crumbs.
  9. Add cheese and sage, then stir in buttermilk until just combined.
  10. Top the chicken mixture with spoonfuls of biscuit dough, covering evenly.
  11. Bake for 25-30 minutes or until biscuits are golden brown and filling is bubbly.
  12. Cool slightly, then garnish with fresh parsley before serving.
