A delightful Chicken Piccata with bright flavors of lemon and capers, perfect for a quick and elegant dinner.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season chicken breasts with salt and pepper. Dredge in flour and shake off excess.
  2. In a large skillet, melt 2 tablespoons of butter with olive oil over medium-high heat.
  3. Add chicken and cook until golden brown on both sides, about 3-4 minutes per side.
  4. Remove chicken from the skillet and set aside.
  5. In the same skillet, add lemon juice, chicken broth, and capers. Bring to a boil, scraping up browned bits from the pan.
  6. Return chicken to the skillet and simmer until cooked through, about 5 more minutes.
  7. Stir in remaining 2 tablespoons of butter and parsley before serving.

Notes

Serve over mashed potatoes or pasta, and store leftovers in an airtight container.
