A delightful Chicken Piccata dish with crispy chicken and tangy lemon sauce, perfect for any occasion.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 4 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1/2 cup fresh lemon juice
  • 1 cup chicken broth
  • 1/4 cup capers
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Dredge each chicken breast in flour, shaking off the excess.
  3. Heat olive oil and 2 tablespoons of butter in a skillet, then add the chicken and cook for 3-4 minutes on each side.
  4. Pour in lemon juice, chicken broth, and capers, bringing the mixture to a boil.
  5. Return the chicken to the skillet, allowing it to cook in the sauce for 2-3 minutes.
  6. Stir in the remaining butter and chopped parsley before serving.

Notes

For the crispiest chicken, ensure the oil is hot before adding the chicken. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
