  • Salt and pepper to taste
  • 1 cup flour for dredging
  • 4 tablespoons olive oil
  • 8 ounces mushrooms, sliced
  • 3/4 cup Marsala wine
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • Chopped parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper, then dredge them in flour, ensuring an even coating for that perfect crust.
  2. Heat the olive oil over medium heat in a large skillet. Add the floured chicken and cook until golden brown, about 5 minutes per side. Remove and set aside to rest.
  3. Add the sliced mushrooms to the same skillet. Sauté until they turn golden brown and fragrant, soaking up all the delicious bits left from the chicken.
  4. Pour in the Marsala wine and chicken broth, using a wooden spoon to scrape up any brown bits from the bottom of the skillet.
  5. Return the seared chicken to the skillet. Let it simmer in the sauce for 5-10 minutes, allowing the flavors to meld and the chicken to cook through.
  6. Stir in the butter until melted, giving the sauce that irresistible glossy finish.
  7. Serve hot, garnished with freshly chopped parsley for a pop of color and freshness.
