Colorful and flavorful Chicken Fajitas made with juicy chicken and fresh veggies, perfect for a weeknight dinner.

Ingredients

Scale
  • 2 chicken breasts, sliced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Tortillas for serving
  • Toppings (sour cream, guacamole, cheese) if desired

Instructions

  1. Heat the olive oil in a skillet over medium heat. Watch as it shimmers, ready to work its magic.
  2. Add sliced chicken, seasoning it generously with chili powder, cumin, garlic powder, salt, and pepper. Cook until the chicken is browned and cooked through—about 5-7 minutes.
  3. Once the chicken is perfectly sautéed, toss in the sliced bell pepper and onion. Sauté until they are tender and their colors brighten, about 3-4 minutes.
  4. Warm the tortillas in a clean skillet or microwave. Serve the chicken and vegetables straight from the skillet, allowing everyone to build their tacos with their favorite toppings. Enjoy every bite!

Notes

Leftover Chicken Fajitas can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove or in the microwave.
