  • 2 pounds Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 packet Fajita seasoning
  • 2 cups Bell peppers
  • 1 medium Onion
  • 8 ounces Cream cheese
  • 1 cup Sour cream
  • 1 cup Chicken stock
  • 1 cup Instant rice
  • 1 cup Colby Jack cheese
  • to taste Salt
  • to taste Pepper

Instructions

  1. Begin by chopping the chicken breasts into bite-sized pieces. In a large skillet, heat the olive oil over medium-high heat. Add the chicken and season with salt and pepper. Cook until browned and fully cooked through, about 5-7 minutes.
  2. Add the diced onion and your colorful bell peppers to the skillet. Sauté for another 4-5 minutes, or until the vegetables have softened and are fragrant.
  3. Sprinkle the fajita seasoning over the chicken and veggies. Stir well, ensuring everything is coated with those vibrant spices.
  4. Lower the heat and add the cream cheese and sour cream. Stir the mixture until the cream cheese has melted and everything is well combined.
  5. Add the cooked rice and chicken stock to the skillet, mixing gently to incorporate. Allow this to heat through for about 2-3 minutes.
  6. Preheat your oven to 350°F (175°C). Pour the chicken and rice mixture into a greased 9×13 inch baking dish, spreading it evenly.
  7. Top the casserole with the Colby Jack cheese, allowing it to blanket the dish beautifully.
  8. Place the dish in the preheated oven and bake for 20 minutes, or until the cheese is bubbly and lightly golden.
  9. Once done, take the casserole out of the oven and let it sit for 5 minutes. Serve warm, and enjoy the symphony of flavors!
