Delicious and cheesy chicken enchiladas, perfect for a comforting family meal.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1/2 cup diced onions
  • 1/2 cup sour cream
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix the shredded chicken, half of the cheese, diced onions, cumin, garlic powder, salt, and pepper in a bowl.
  3. Heat the tortillas in a skillet until warm and pliable.
  4. Spoon some of the chicken mixture into each tortilla, roll them up tightly, and place seam-side down in a baking dish.
  5. Pour the enchilada sauce over the rolled enchiladas and sprinkle the remaining cheese on top.
  6. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  7. Serve hot with a generous dollop of sour cream on the side.

Notes

Use rotisserie chicken for convenience, and feel free to customize the fillings with your favorite ingredients.
