Chicken Enchiladas

Comforting chicken enchiladas wrapped in flour tortillas, smothered in enchilada sauce and cheese.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup enchilada sauce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 flour tortillas
  • 1/2 cup chopped onion
  • 1/2 cup sour cream
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Combine the shredded chicken, 1/2 cup of enchilada sauce, cumin, garlic powder, onion, salt, and pepper in a large bowl.
  3. Place a portion of the chicken mixture into each tortilla, roll them up tightly, and place them seam-side down in a greased baking dish.
  4. Pour the remaining enchilada sauce over the rolled tortillas, and sprinkle generously with shredded cheese.
  5. Cover the dish with foil and bake for 20 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  7. Serve hot with a dollop of sour cream on top.

Notes

Warm tortillas before rolling to prevent tearing. Experiment with different proteins or add jalapeños for spice.
