A comforting and flavorful Chicken Burrito Casserole that combines layers of shredded chicken, black beans, corn, and melted cheese, topped with crunchy tortilla chips.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 can diced tomatoes with green chilies
  • 1 package taco seasoning
  • 2 cups cooked rice
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • Tortilla chips, for topping
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, cooked rice, and salsa in a large bowl.
  3. Spread a layer of the mixture in a greased 9×13 inch baking dish.
  4. Sprinkle a layer of cheese on top.
  5. Repeat the layering process until all ingredients are used, finishing with a layer of cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and slightly golden.
  7. Remove from the oven and let cool for a few minutes.
  8. Serve with tortilla chips on top and garnish with fresh cilantro if desired.

Notes

Feel free to customize with different proteins or toppings to suit your taste. This casserole can also be made a day in advance.
