A colorful and nutritious Chicken Burrito Bowl topped with seasoned chicken, black beans, corn, and fresh ingredients.

Ingredients

  • 1 lb chicken breast
  • 2 cups cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1 cup shredded cheese
  • 1/2 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Start by seasoning the chicken breast with cumin, chili powder, salt, and pepper.
  2. Heat a skillet over medium heat and cook the seasoned chicken until it’s fully cooked—about 6-7 minutes per side.
  3. In a bowl, layer your masterpiece starting with the cooked rice.
  4. Add black beans, corn, diced tomatoes, and don’t forget to beautifully slice the chicken on top.
  5. Top your bowl with diced avocado, a generous handful of shredded cheese, and a dollop of salsa.
  6. Garnish with fresh cilantro for that pop of color and freshness.

Notes

For the best results, marinate the chicken ahead of time and feel free to substitute rice with quinoa.
