  • 1 pound chicken (cut into pieces)
  • 4 cups chicken broth
  • 1 medium onion (chopped)
  • 2 carrots (sliced)
  • 2 celery stalks (chopped)
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup butter (melted)
  • 1 tablespoon parsley (chopped, optional)

Instructions

  1. Combine the chicken and vegetables: In a large pot, combine chicken, chicken broth, onion, carrots, and celery. Bring to a boil, then reduce heat and simmer until chicken is cooked through, about 20 minutes.
  2. Shred the chicken: Remove the chicken from the pot and shred it into bite-sized pieces. Return the shredded chicken back to the pot.
  3. Mix the dumpling batter: In a separate bowl, mix flour, baking powder, salt, and pepper. Stir in the milk and melted butter until just combined to form a thick batter.
  4. Create the dumplings: Using a spoon, drop generous spoonfuls of the dumpling batter into the simmering broth. Ensure they are evenly spaced. Cover the pot and cook for 15 minutes without lifting the lid.
  5. Serve the dish: Serve hot, garnished with parsley if desired for an added touch of flavor and color.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. To reheat, gently warm on the stove with a little extra chicken broth or water to loosen the dumplings.
