Delightful cookies that capture the essence of warm, buttery French toast in every chewy bite.

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add in the eggs, vanilla extract, and maple syrup; mix until well combined.
  4. Combine the flour, baking soda, cinnamon, and salt in a separate bowl. Gradually add to the wet ingredients, mixing until just combined.
  5. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be served with vanilla ice cream or paired with coffee or milk. Store leftovers in an airtight container for up to one week.
