A delightful cherry pie with fresh or frozen cherries that bursts with flavor, topped with a flaky golden crust.

Ingredients

  • 2 cups fresh or frozen cherries, pitted
  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/4 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Combine the cherries, sugar, cornstarch, lemon juice, almond extract, and salt in a medium bowl and let it sit for 10 minutes.
  3. Roll out the pie crust on a floured surface and fit it into a pie dish.
  4. Pour the cherry filling into the prepared crust and dot with butter.
  5. Cover with a second crust, sealing it well and cutting slits in the top crust for steam to escape.
  6. Bake in the preheated oven for 35-40 minutes or until the crust turns golden brown. Allow cooling before serving.

Notes

Serve warm with ice cream or whipped cream. Store leftovers in the refrigerator for up to 3 days.
